Welcome to the Year of the Rooster!!
It was an amazing to experience it all with my family in Singapore! It has been 7 years since I last returned to Singapore. So much has changed and I hardly recognised where I was going!!!
My little cousins, whom I used to babysit, are all grown up and I was worried if I would be able to reconnect with them after all these years.
It was not neccessary... we discovered a common thread - baking! In one afternoon we had such fun baking brownies and chocolate chip cookies! It was such a thrill to watch everyone enjoy delights.
So I am sharing my favourite brownie recipe - that I shared with them. Who knows maybe it will also bring you the joy to you and your loved ones. It sure did for my cousins and I.
Brownie recipe (Unadapted from an unknown source)
4oz unsalted butter
4oz semisweet chocolate
2oz unsweetened chocolate
3 oz white sugar
4 oz brown sugar
2 large eggs
1.5 tsp vanilla paste/extract
3.5 oz flour
4 oz chocolate chips/chunks
2 oz raspberries (optional)
What to do next:
Beat sugar and egg together.
Melt butter n chocolate in a Bain marie.
Stir the 2 mixes together, followed by vanilla extract, flour n salt.
Mix till smooth.
Mix in the chocolate chunks n raspberries.
Cook at 160 deg Celsius for about 30 -40 mins - depending on the depth of the mix.
